Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  2. In a small bowl, whisk together honey, fresh lemon juice, and minced garlic. Set aside.
  3. Heat a non-stick skillet or cast-iron pan over medium-high heat and add olive oil. Wait until the oil shimmers but isn’t smoking.
  4. Place salmon fillets skin-side down in the hot pan. Press down lightly for 10 seconds to prevent curling. Cook without moving for 4-5 minutes until the skin is crisp and golden brown.
