Simple, colorful, and easy-to-hold finger foods perfect for pool parties and summer gatherings. These snacks are quick to prepare, kid-friendly, and made with familiar ingredients that keep the fun going.

Ingredients

  • Mini sandwich rolls or slider buns (e.g., King’s Hawaiian rolls)
  • Sliced deli turkey or chicken breast (nitrate-free if possible)
  • Cheese slices (mild cheddar or mozzarella, pre-sliced)
  • Baby spinach or lettuce leaves
  • Cherry tomatoes, halved
  • Cucumber slices, thin rounds, peeled if skin is tough
  • Hummus or cream cheese spread (e.g., Sabra hummus)
  • Carrot sticks, fresh and crunchy
  • Mini pretzel sticks
  • Fresh fruit skewers (seasonal fruits like watermelon cubes, pineapple chunks, or fresh berries)
  • Optional: Everything bagel seasoning for sprinkling on sandwich tops

Instructions

  1. Prep the veggies and fruit (10 minutes): Rinse baby spinach, cherry tomatoes, and cucumbers. Halve the tomatoes and thinly slice the cucumbers. Peel and cut carrot sticks into manageable lengths. Thread fruit chunks onto skewers.
  2. Slice the rolls (5 minutes): Using a serrated knife, carefully slice the mini sandwich rolls horizontally without cutting all the way through, leaving a hinge.
  3. Spread the base (5 minutes): Spread a thin layer of hummus or cream cheese inside each roll to add moisture and flavor.
  4. Assemble the sandwiches (10-15 minutes): Layer a slice of deli turkey or chicken breast, followed by a cheese slice, then add baby spinach or lettuce leaves, cucumber slices, and cherry tomato halves. Close the roll gently but firmly.
  5. Secure with skewers or toothpicks (5 minutes): Insert a skewer or toothpick through each sandwich to hold it together. Optionally sprinkle everything bagel seasoning on top.
  6. Arrange on serving platter (5 minutes): Place sandwiches, carrot sticks, pretzel sticks, and fruit skewers attractively on a large tray. Keep napkins nearby.

Notes

Assemble sandwiches close to serving time to prevent sogginess. Keep sandwiches covered and refrigerated until serving. Prepare veggie slices and spreads a day ahead if desired. Use fresh, crisp veggies for best texture. Optional seasoning adds extra flavor. For gluten-free, use gluten-free rolls or lettuce wraps. For vegetarian, substitute deli meat with grilled veggies or falafel.
