These Easy Italian Sub Pinwheel Roll-Ups are a fresh, handheld twist on classic deli sandwiches, perfect for picnics, beach days, or quick snacks. They combine Italian deli meats, provolone cheese, fresh veggies, and tangy Italian dressing rolled in soft flatbread.

  • Flatbread or large flour tortillas (8–10 inches wide)
  • 4 oz sliced pepperoni
  • 4 oz sliced salami
  • 4 oz sliced ham
  • 6 oz sliced provolone cheese (or mozzarella as substitute)
  • 1 cup shredded iceberg or romaine lettuce
  • 1 medium tomato, thinly sliced
  • A few thin slices of red onion (optional)
  • ¼ cup chopped banana peppers or mild pickled peppers
  • 3 tablespoons Italian dressing (homemade or store-bought)
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Instructions

  1. Thinly slice the tomato and red onion. Chop the banana peppers into small pieces. Rinse and dry the lettuce, then roughly chop if leaves are large.
  2. In a mixing bowl, combine the shredded lettuce and tomato slices with 2 tablespoons of the Italian dressing.
  3. Spread a piece of flatbread or tortilla on a cutting board. Warm briefly in microwave for about 10 seconds if needed to soften.
  4. Layer provolone cheese slices evenly over the flatbread. Arrange pepperoni, salami, and ham slices over the cheese, overlapping slightly.
  5. Add the dressed lettuce and tomato evenly on top, followed by banana peppers, onion slices, and fresh basil leaves if using.
  6. Drizzle the remaining tablespoon of dressing lightly over everything. Sprinkle a pinch of salt and pepper on the tomato slices.
  7. Starting from one edge, tightly roll the flatbread into a log shape. Wrap in plastic wrap or parchment paper and chill in the fridge for 10–15 minutes to help hold shape.
  8. Using a sharp knife, slice the roll into 1-inch thick rounds using a gentle sawing motion.
  9. Arrange the pinwheels on a platter or container and serve immediately or pack for later.

Notes

Warm flatbread slightly before rolling to prevent cracking. Use a sharp knife to slice cleanly. Wrap and chill roll-ups before slicing to help them hold shape. For tangier flavor, add red wine vinegar or crushed red pepper flakes. Store wrapped in fridge up to 2 days. Can freeze rolled logs before slicing for up to 1 month.
