A quick, fresh, and no-cook bento box lunch featuring kid-friendly Caprese skewers paired with simple sides, perfect for busy mornings and keeping kids happy and fueled.

  • 1 cup cherry tomatoes
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 1520 fresh basil leaves
  • 12 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 medium cucumber, sliced
  • 1 cup baby carrots or carrot sticks
  • 1 serving whole grain crackers or pita chips
  • 1/4 cup hummus or ranch dip
  • 1/2 cup fresh fruit (apple slices or grapes)

Instructions

  1. Rinse cherry tomatoes and basil leaves under cold water and pat dry. Slice cucumber into thin rounds and prepare any fruit by slicing or washing grapes. Lay out baby carrots or carrot sticks.
  2. In a medium bowl, combine mozzarella balls, cherry tomatoes, and basil leaves. Drizzle with 1-2 tablespoons of extra virgin olive oil, add a pinch of salt and freshly ground black pepper. Hold off on adding balsamic glaze until skewers are assembled if using.
  3. Take a skewer and thread on one cherry tomato, followed by a basil leaf (folded if large), then a mozzarella ball, and finish with another tomato or basil leaf if skewer length allows. Repeat until all ingredients are used.
  4. Place the Caprese skewers in one compartment of the bento box. Arrange cucumber slices and baby carrots in separate sections. Add crackers or pita chips beside a small container with hummus or ranch dip. Fill the last compartment with fresh fruit.
  5. Optionally, drizzle a little balsamic glaze over the Caprese skewers just before closing the lunchbox or pack it separately to avoid sogginess. Seal the box tightly and refrigerate if not eaten soon.

Notes

Drain mozzarella balls well on paper towels before mixing to avoid sogginess. Fold basil leaves to fit better on skewers without tearing. Assemble skewers shortly before packing to keep fresh. Keep the bento box chilled with an ice pack if not eaten within a few hours. Substitute ingredients as needed for dietary preferences or seasonal availability.
