  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cups broccoli florets (about 150 grams)
  • 1 cup baby carrots (about 120 grams)
  • 1 medium red bell pepper, sliced
  • 1/4 cup honey (60 ml)
  • 4 garlic cloves, minced
  • 1/4 cup soy sauce (60 ml) (low sodium preferred)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, olive oil, and red pepper flakes if using. Set aside.
  3. Pat dry the chicken breasts and season both sides with salt and pepper.
  4. Heat an oven-safe skillet over medium-high heat. Add a bit of olive oil and sear the chicken breasts for 2-3 minutes per side until golden brown.
  5. Arrange broccoli florets, baby carrots, and sliced red bell pepper around the chicken in the skillet.
  6. Pour the honey garlic sauce evenly over the chicken and vegetables. Gently toss the veggies to coat without moving them too much around the chicken.
  7. Transfer the skillet to the preheated oven and roast uncovered for 15-18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender-crisp.
  8. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Notes

If the sauce is too thin after roasting, reduce it on the stovetop over medium heat for a couple of minutes. Avoid overcrowding the pan to ensure proper roasting and flavor. Let the chicken rest after cooking to keep it juicy and allow the sauce to thicken. You can swap broccoli with green beans or asparagus, and use tamari instead of soy sauce for gluten-free. For a vegetarian version, substitute chicken with firm tofu or tempeh.
