  • 2 ½ cups whole milk or 2% milk

  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons melted butter (for greasing)

Instructions

  1. Cube about 8 cups (about 12 slices) of day-old brioche or challah bread into roughly 1-inch pieces. Toss gently with 1 ½ cups of fresh or frozen blueberries in a large mixing bowl. Set aside.
  2. In a large bowl, whisk together 6 large eggs, 2 ½ cups whole milk, ½ cup heavy cream, ½ cup granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and ¼ teaspoon salt until fully combined and slightly frothy (about 1-2 minutes).
  3. Pour the custard mixture over the bread and blueberries. Use a spatula or spoon to gently fold everything together, making sure all pieces are well coated. Let it sit for 10 minutes, then toss gently again to help the bread absorb the liquid evenly.
  4. Grease a 9×13-inch baking dish with 2 tablespoons melted butter. Pour the soaked bread mixture into the dish, spreading it out evenly with a spatula. Cover tightly with plastic wrap or foil.
  5. Place the covered dish in the refrigerator for at least 6 hours or overnight to let the bread soak up the custard fully.
  6. Preheat oven to 350°F (175°C). Remove the plastic wrap or foil and bake uncovered for 45-50 minutes, or until the top is golden brown and the custard is set but still slightly jiggly in the center. If the top browns too fast, loosely tent with foil.
  7. Let the French toast bake cool for about 10 minutes before serving. Dust with powdered sugar or drizzle with maple syrup if desired. Enjoy warm!
