  • 1/2 cup cooked chicken breast, shredded or diced
  • 1 cup fresh spinach, roughly chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • Fresh basil leaves (optional)
  • 1 teaspoon olive oil (for brushing skillet)
  • Salt and pepper to taste
  • Optional extras: sliced avocado, balsamic glaze, chili flakes

Instructions

  1. Chop the cooked chicken breast into small bite-sized pieces (about 1/2 cup). Roughly chop the fresh spinach (about 1 cup) and finely dice sun-dried tomatoes (1/4 cup). Set aside.
  2. Lay one large flour tortilla flat on your work surface. Using a butter knife or small offset spatula, spread about 2 tablespoons of softened cream cheese evenly over the entire tortilla surface.
  3. Sprinkle 1/4 cup shredded cheese over the cream cheese layer. Evenly distribute the chicken, spinach, sun-dried tomatoes, and a few fresh basil leaves (if using) on one half of the tortilla. Season lightly with salt and pepper.
  4. Fold the tortilla in half over the fillings to create a semi-circle. Then, gently press the bottom of the semi-circle upwards, forming a point to create a heart shape.
  5. Place a non-stick skillet or griddle over medium heat. Brush about 1 teaspoon of olive oil on the skillet surface.
  6. Place the folded tortilla heart in the skillet. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted inside. Flip carefully using a spatula to keep the shape intact.
  7. Transfer the warm wrap to a plate. Optionally, add a drizzle of balsamic glaze or a sprinkle of chili flakes on top. Cut in half to serve.
