  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Cut chicken into 1-inch pieces, mince garlic, grate ginger, slice green onions, and chop veggies if fresh. (About 10 minutes prep)
  2. In a small bowl, whisk together teriyaki sauce, soy sauce, honey, cornstarch mixed with water. Set aside.
  3. Heat 2 tablespoons vegetable oil in a large non-stick skillet or wok over medium-high heat until shimmering (1-2 minutes).
  4. Add chicken in a single layer; sear without moving for 2-3 minutes until golden, then stir and cook 3-4 more minutes until cooked through (165°F internal temperature).
  5. Push chicken to the side; add garlic and ginger, stir for 30 seconds until fragrant.
  6. Add mixed vegetables; stir-fry 3-5 minutes until tender-crisp.
  7. Pour in sauce slurry; stir to coat chicken and veggies evenly. Sauce will thicken and become sticky in 1-2 minutes. Add water if too thick.
  8. Remove from heat; garnish with sliced green onions and sesame seeds.
  9. Serve immediately with steamed rice or noodles.
