  • 1/2 cup honey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 1/4 cup water
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons cold water (for cornstarch slurry)
  • 1 teaspoon sesame oil (optional)
  • Green onions, sliced (for garnish)
  • Toasted sesame seeds (optional, for garnish)

Instructions

  1. Pat dry the chicken thighs with paper towels and season lightly with salt and pepper if desired.
  2. In a mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and water.
  3. Place chicken thighs evenly in the bottom of the crockpot and pour the honey garlic sauce over the chicken, turning to coat all pieces.
  4. Cover and cook on low for 5 to 6 hours until chicken is fork-tender and sauce is bubbling gently.
  5. About 30 minutes before serving, mix cornstarch with cold water to create a slurry. Stir the slurry into the crockpot, cover, and cook on high for 20-30 minutes to thicken the sauce.
  6. Stir in sesame oil if using. Garnish with sliced green onions and toasted sesame seeds before serving.

Notes

Patting the chicken dry before cooking helps the sauce stick better and caramelize. Use chicken thighs for juiciness and tenderness. Add cornstarch slurry near the end to avoid lumps and over-thickening. Cooking on low yields the best tenderness. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
