  • 1 large egg, room temperature
  • ½ cup (120 ml) eggnog
  • 1 teaspoon vanilla extract
  • ½ cup (113 g) unsalted butter, softened (for frosting)
  • 2 cups (240 g) powdered sugar, sifted
  • ½ teaspoon ground nutmeg (for frosting)
  • 23 tablespoons (3045 ml) milk or heavy cream
  • ½ teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and ground nutmeg.
  3. In a large bowl, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Slowly mix in the eggnog until the dough is smooth.
  6. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  7. Scoop tablespoon-sized dough balls and place them 2 inches apart on the baking sheet. Roll dough between palms for uniform shape.
  8. Bake for 10-12 minutes, until edges are lightly golden but centers remain soft.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack.
  10. For the frosting, beat softened butter until creamy. Gradually add powdered sugar and beat at low speed.
  11. Add ground nutmeg, vanilla extract, and 2 tablespoons milk or heavy cream. Beat on high until fluffy. Add more milk if needed.
  12. Once cookies are completely cool, spread a generous layer of nutmeg frosting on each.
  13. Optionally, sprinkle a pinch of ground nutmeg or cinnamon on top before serving.

Notes

Chill dough for 20 minutes before baking if butter is too soft. Use fresh grated nutmeg for best flavor. Cool cookies completely before frosting to prevent melting. Frosting can be chilled for 10 minutes if too soft. Dough can be refrigerated up to 24 hours before baking.
