  • 1 tbsp harissa paste (adjust to taste)
  • 1 tsp olive oil
  • Pinch of salt
  • 1 ½ cups Greek yogurt (full fat or low-fat)
  • 1 tbsp honey or maple syrup
  • ½ cup granola (preferably with nuts and seeds)
  • ¼ cup chopped toasted almonds or pecans
  • 1 cup fresh berries (blueberries, strawberries, or raspberries)
  • 1 medium mango, peeled and diced
  • 2 tbsp shredded coconut (toasted if possible)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the Harissa Chickpeas: In a medium bowl, toss the drained chickpeas with 1 tsp olive oil, 1 tbsp harissa paste, and a pinch of salt. Heat a skillet over medium heat and warm the chickpeas for 5 minutes, stirring occasionally until fragrant and slightly crispy. Set aside to cool slightly.
  2. Mix the Yogurt Base: In a separate bowl, stir the Greek yogurt together with 1 tbsp honey or maple syrup. Taste and adjust sweetness if needed.
  3. Toast Nuts and Coconut: On a dry skillet over medium heat, toast the chopped almonds or pecans for 3-4 minutes until golden and aromatic. Toast shredded coconut separately for 1-2 minutes until lightly browned. Watch closely to avoid burning.
  4. Prep the Fruit: Wash berries and pat dry. Dice the mango into bite-sized pieces. Set aside.
  5. Assemble the Layers: In your serving bowl, start with a generous spoonful of the yogurt mixture to create the base. Next, sprinkle a layer of granola, followed by a layer of mango chunks.
  6. Add a layer of harissa chickpeas, then a layer of berries for freshness.
  7. Sprinkle the toasted nuts and coconut over the top.
  8. Repeat layering if your bowl allows to create all seven layers.
  9. Garnish with fresh mint leaves for a pop of color and refreshing contrast.
  10. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

Adjust harissa paste amount to control spiciness. Toast nuts and coconut carefully to avoid burning. Use fresh fruit for best flavor. For dairy-free, substitute Greek yogurt with coconut or almond yogurt and use vegan granola. Can roast chickpeas in oven at 400°F for 20 minutes as an alternative method.
