  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup rainbow sprinkles (jimmies style)
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (30g) powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon heavy cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×9 inch pan or line with parchment paper for easy removal.
  2. In a large bowl, whisk together the melted butter and sugar until well combined, about 1-2 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, and salt.
  4. Gradually add the dry ingredients into the wet mixture, folding gently with a spatula until just combined. Stop once no flour streaks remain.
  5. Fold in the rainbow sprinkles gently to distribute evenly.
  6. In a small bowl, beat the softened cream cheese, powdered sugar, vanilla, and heavy cream (if using) until smooth and creamy, about 1-2 minutes.
  7. Pour half of the brownie batter into the pan, spreading evenly. Dollop half of the cream cheese mixture over the batter in small spoonfuls. Repeat layering with remaining brownie batter and cream cheese dollops.
  8. Using a toothpick or skewer, gently swirl the cream cheese through the brownie batter in a figure-eight pattern without overmixing.
  9. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  10. Let the brownies cool completely in the pan on a wire rack before cutting into bite-sized squares.

Notes

Use jimmies style sprinkles to prevent color bleeding. Soften cream cheese for at least 30 minutes before mixing. Do not overmix batter to keep brownies fudgy.
