A quick and easy fruit pizza featuring a buttery crust, tangy cream cheese layer, and fresh strawberries and blueberries arranged to resemble the American flag. Perfect for Fourth of July and summer celebrations.

Ingredients

  • All-purpose flour – 1 ½ cups (190g)
  • Granulated sugar – ⅓ cup (65g)
  • Unsalted butter – ½ cup (113g), softened
  • Vanilla extract – 1 teaspoon
  • Salt – a pinch
  • Cream cheese – 8 ounces (225g), softened
  • Powdered sugar – ¾ cup (90g)
  • Pure vanilla extract – 1 teaspoon
  • Heavy cream – 2 tablespoons (30ml)
  • Fresh strawberries – 1 ½ cups, hulled and thinly sliced
  • Fresh blueberries – 1 cup, washed and dried
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prepare the crust: In a medium bowl, whisk together flour, sugar, and salt. Add softened butter and vanilla extract. Mix until dough forms a crumbly ball without overworking.
  2. Chill the dough: Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat oven to 350°F (175°C) while dough chills.
  4. Roll out the crust: On a lightly floured surface, roll dough into a 12-inch circle. Transfer to a parchment-lined baking sheet or pizza pan. Dough should be about ¼ inch thick.
  5. Bake the crust for 15-18 minutes until edges are golden brown. Cool completely on a wire rack (about 30 minutes).
  6. Make the cream cheese layer: Beat softened cream cheese with powdered sugar and vanilla until smooth and fluffy. Add heavy cream and beat until light and spreadable.
  7. Spread the cream cheese layer evenly over the cooled crust, leaving a ½-inch border around edges.
  8. Arrange the fruit: Place blueberries in the top left corner for the stars. Alternate rows of sliced strawberries and blueberries to mimic stripes.
  9. Chill the assembled fruit pizza for at least 30 minutes before serving.
  10. Slice into wedges and garnish with fresh mint leaves if desired. Serve chilled.

Notes

Chill the dough before rolling to prevent shrinking. Cool the crust completely before adding cream cheese layer to avoid sogginess. Use an electric mixer for a smooth cream cheese layer. Pat berries dry if very juicy. Slice strawberries thinly for balanced topping. Refrigerate assembled pizza before slicing for easier cutting and flavor melding. Can substitute gluten-free flour and dairy-free cream cheese for dietary needs.
