  • ½ tsp oregano (preferably Mexican oregano)
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp salt (sea salt or kosher salt, or to taste)
  • ½ tsp freshly ground black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • Small corn or flour tortillas, warmed
  • Fresh cilantro, chopped
  • Diced tomatoes
  • Shredded lettuce
  • Diced onions
  • Sliced jalapeños
  • Shredded cheese (cheddar or Mexican blend)
  • Sour cream
  • Lime wedges

Instructions

  1. Mix your homemade taco seasoning: In a small bowl, combine chili powder, ground cumin, paprika, oregano, onion powder, garlic powder, salt, black pepper, and crushed red pepper flakes (if using). Stir well and set aside.
  2. Prep your fresh ingredients: Finely chop the onion, mince the garlic, and prepare toppings like cilantro, tomatoes, and jalapeños.
  3. Heat a large skillet over medium-high heat and add 1 tablespoon oil. Let the oil shimmer but not smoke.
  4. Add the chopped onion and cook for about 3 minutes until translucent and fragrant. Add the garlic and cook for another 30 seconds, stirring constantly.
  5. Add the ground beef to the pan. Break it apart with a wooden spoon and cook for 6-8 minutes until browned and no longer pink.
  6. Sprinkle the homemade taco seasoning evenly over the beef. Pour in ½ cup water and stir well to combine.
  7. Reduce heat to medium-low and simmer for 5 minutes, stirring occasionally, until most of the liquid is absorbed and the meat is juicy and well-coated.
  8. Warm the tortillas using a skillet, microwave, or tortilla warmer. Keep them wrapped in a clean towel to stay warm and soft.
  9. Assemble the tacos by spooning the beef mixture into each tortilla. Top with shredded cheese, fresh cilantro, diced tomatoes, onions, jalapeños, and a dollop of sour cream. Squeeze lime over the top.
  10. Serve immediately while warm and juicy.

Toast cumin and chili powder before mixing for extra smoky flavor. Do not overcrowd the pan to ensure proper browning. Add a splash more water if the mixture seems dry while simmering.
