  • 1 pre-made flatbread or pizza dough (1012 inches)
  • 2 tablespoons extra virgin olive oil, for brushing
  • Pinch of sea salt
  • 68 medium fresh figs, sliced thinly
  • 6 ounces Brie cheese, rind removed and sliced thin
  • 1/2 cup candied walnuts (homemade or store-bought)
  • 23 tablespoons hot honey (store-bought or homemade)

Instructions

  1. Preheat your oven to 450°F (230°C). If using a pizza stone, place it in the oven while it heats.
  2. Lightly brush both sides of the flatbread or rolled-out pizza dough with olive oil and sprinkle a pinch of sea salt over the top.
  3. Arrange thin slices of Brie evenly across the flatbread, leaving a small border around the edges for the crust.
  4. Layer the fresh fig slices on top of the Brie, overlapping slightly to cover the surface.
  5. Bake the flatbread on the hot pizza stone or baking sheet for 10-12 minutes, or until the crust is golden and crisp and the Brie has melted.
  6. Once out of the oven, sprinkle the candied walnuts generously over the flatbread while it’s still hot.
  7. Drizzle 2-3 tablespoons of warm hot honey across the flatbread in a zigzag pattern.
  8. Slice the flatbread into 6-8 pieces and serve immediately.

Notes

Use thin, even slices of Brie to ensure proper melting. Avoid overloading the flatbread with toppings to prevent sogginess. Warm the hot honey slightly before drizzling for best flow. For a vegan version, substitute Brie with cashew-based cheese and hot honey with maple syrup infused with cayenne. Preheat pizza stone for a crispier crust. Leftovers can be stored in the fridge for up to 2 days and reheated in the oven at 350°F for 5-7 minutes.
