Ingredients

Scale
  • 2 racks pork baby back ribs (34 pounds / 1.41.8 kg), trimmed of excess fat
  • 3 medium fresh nectarines, pitted and chopped
  • 1/2 cup bourbon (120 ml)
  • 1/4 cup brown sugar (50 grams), packed
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1/2 cup ketchup (120 ml)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Remove the thin membrane from the back of each rack of ribs (about 10 minutes). Rinse and pat dry with paper towels.
  2. Combine smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Rub this mixture evenly over both sides of the ribs. Let rest at room temperature for 15-20 minutes.
  3. Heat olive oil in a medium saucepan over medium heat. Add chopped nectarines and sauté for 4-5 minutes until softened and fragrant.
  4. Stir in bourbon, brown sugar, apple cider vinegar, and ketchup. Bring to a simmer, reduce heat to low, and cook for 15-20 minutes, stirring occasionally, until the sauce thickens and nectarines start to break down.
  5. Use an immersion blender to puree the sauce until smooth. Alternatively, transfer to a blender carefully, then return to saucepan to keep warm.
  6. Preheat grill for indirect heat at medium-low (around 275°F / 135°C) or oven to 300°F (150°C).
  7. Place ribs bone-side down on the cooler part of the grill or on a rack in the oven. Cook for about 2 to 2.5 hours, turning occasionally, until tender but not falling apart.
  8. During the last 20 minutes of cooking, brush ribs generously with the nectarine bourbon glaze every 5-7 minutes to build a sticky, flavorful coating.
  9. Remove ribs from heat and tent loosely with foil. Let rest for 10 minutes before slicing between the bones.

Notes

Remove the membrane for tender ribs. Use indirect heat to avoid burning the glaze. Start glazing only in the last 20 minutes to prevent burning sugars. Maintain grill temperature between 275°F and 300°F. Rest ribs after cooking for juiciness. Glaze can be reheated gently if thickened. Frozen nectarines can be used if thawed and drained. Bourbon can be substituted with apple juice or non-alcoholic vanilla extract for alcohol-free version.
