A quick and easy summer BBQ side dish featuring grilled corn slathered with a vibrant cilantro lime butter that adds a fresh, tangy, and smoky flavor.

  • 46 ears fresh corn on the cob, husked
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup fresh cilantro, finely chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 clove garlic, minced (optional)
  • 1/2 teaspoon salt, or to taste
  • Pinch of ground black pepper
  • 1/4 teaspoon smoked paprika or chili powder (optional)

Instructions

  1. In a medium bowl, combine softened unsalted butter, finely chopped fresh cilantro, lime juice, minced garlic (if using), salt, and black pepper. Mix thoroughly until smooth and well combined. Set aside or refrigerate briefly if it needs to firm up.
  2. Husk the corn completely, removing all silk strands. Rinse under cold water and pat dry with a towel.
  3. Preheat your grill to medium-high heat, about 400°F (200°C).
  4. Place the corn directly on the grill grates. Turn every 2-3 minutes to get even char marks all around, cooking for about 10-12 minutes total until kernels are tender and slightly charred but not blackened.
  5. Remove corn from the grill and while still hot, generously brush or spread the cilantro lime butter over each ear.
  6. Optionally, sprinkle a tiny bit of smoked paprika or chili powder over the buttered corn for a smoky, spicy kick.
  7. Serve immediately, optionally squeezing a little extra lime juice on top for added brightness.

Notes

If butter firms up too much in the fridge, let it sit at room temperature before spreading. Keep turning corn every 2-3 minutes to avoid burning. Fresh lime juice and cilantro are key for vibrant flavor. For dairy-free, use vegan butter or coconut oil. If no grill is available, roast corn wrapped in foil in a 425°F (220°C) oven for 20 minutes, turning halfway through.
