A quick and easy snack featuring ground beef simmered in Guinness stout, layered over crispy tortilla chips and topped with melted cheddar and Monterey Jack cheeses for a rich, malty, and comforting flavor.

  • 1 cup Guinness stout (240 ml)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 8 cups tortilla chips (about 200 g), sturdy restaurant-style preferred
  • 1 cup shredded cheddar cheese (100 g)
  • 1 cup shredded Monterey Jack cheese (100 g)
  • Optional: sliced jalapeños
  • Sour cream and fresh cilantro for serving

Instructions

  1. Prep the Ingredients (5 minutes): Finely chop the onion, mince the garlic, and slice jalapeños if using. Shred cheddar and Monterey Jack cheese separately. Preheat your broiler to high.
  2. Brown the Beef (8 minutes): Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned but not fully cooked through—about 5 minutes.
  3. Add Aromatics (2 minutes): Stir in chopped onion and minced garlic. Cook until onions soften and become translucent, roughly 2-3 minutes.
  4. Season and Simmer with Guinness (10 minutes): Add chili powder, cumin, smoked paprika, salt, and pepper. Pour in the Guinness and stir well. Reduce heat to medium-low and simmer until most of the liquid evaporates and beef is tender—about 8-10 minutes.
  5. Assemble the Nachos (5 minutes): Spread half the tortilla chips evenly on an oven-safe baking dish. Spoon half the beef mixture over the chips. Sprinkle half of each shredded cheese on top. Layer the remaining chips, beef, and cheeses similarly.
  6. Melt the Cheese (3-5 minutes): Place the baking dish under the broiler. Keep an eye on it—the cheese should bubble and turn golden but not burn.
  7. Finish and Serve: Remove from oven carefully. Garnish with sliced jalapeños, dollops of sour cream, and fresh cilantro. Serve immediately.

Notes

Avoid overloading nachos with toppings before melting cheese to prevent sogginess. Let nachos rest a minute after broiling to crisp chips slightly. Simmering beef in Guinness is key for rich flavor. Freshly shredded cheese melts better than pre-shredded. Watch cheese closely under broiler to avoid burning.
