  • 78 pounds bone-in fully cooked ham (spiral-cut preferred)
  • 1 cup pure maple syrup
  • 1/4 cup bourbon whiskey
  • 1/2 cup packed brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 can pineapple rings, drained
  • Whole cloves (optional, for studding ham)

Instructions

  1. Preheat your oven to 325°F (163°C). Prepare a roasting pan with a rack.
  2. Score the surface of the ham in a diamond pattern about 1/8 inch deep. Insert whole cloves into the intersections if using.
  3. In a medium saucepan, combine maple syrup, bourbon, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and ground cloves. Warm over medium heat, stirring occasionally until sugar dissolves and mixture thickens slightly, about 8-10 minutes.
  4. Place the ham on the rack and arrange pineapple rings on top, securing with toothpicks if needed.
  5. Brush the maple bourbon glaze all over the ham and pineapple, reserving about one-third of the glaze.
  6. Roast the ham in the oven for 15-18 minutes per pound, basting every 20 minutes with the reserved glaze. For a 7-pound ham, roast approximately 1 hour 45 minutes to 2 hours.
  7. In the last 15 minutes, increase oven temperature to 400°F (204°C) to caramelize the glaze, watching carefully to avoid burning.
  8. Remove the ham from the oven and let it rest for 15 minutes before slicing.

Notes

Simmer the glaze gently to achieve the right syrupy consistency. Score the ham to allow glaze penetration. Baste every 20 minutes for a sticky, caramelized finish. Use foil tent to prevent over-browning. Rest ham 15 minutes before slicing. Substitute bourbon with apple cider and vanilla extract for non-alcoholic version. Fresh pineapple can be grilled or seared before use.
