Instructions

  1. Preheat your oven to 200°F (95°C). Line a baking sheet with parchment paper.
  2. Spread the dried mushrooms evenly on the sheet, breaking large pieces into smaller chunks.
  3. Roast for 45–60 minutes, flipping halfway through, until mushrooms are dry, brittle, and deeply colored.
  4. Remove mushrooms and let them cool completely.
  5. Transfer cooled mushrooms to a high-speed blender or spice grinder. Pulse in short bursts until a fine, flour-like powder forms (1–3 minutes).
  6. Mix in the sea salt evenly by blending or stirring.
  7. Store the mushroom powder in an airtight jar in a cool, dry place away from sunlight.

Notes

Roast mushrooms low and slow to unlock richer flavor. Ensure mushrooms are completely dry before grinding to avoid clumping. Use a dedicated spice grinder for best results. Store powder in airtight container away from moisture and heat for up to 6 months. Add mushroom powder late in delicate dishes to preserve flavor.
