  • 1 lb (450 g) ground beef (85% lean)
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 1 tbsp olive oil
  • 2 cups (400 g) cooked rice (white or brown)
  • 1 can black beans, drained and rinsed
  • 1 cup (100 g) shredded cheddar cheese
  • 1 cup (150 g) chopped tomatoes
  • 1 cup (50 g) shredded lettuce
  • 1 medium avocado, sliced
  • 1/2 cup (120 ml) sour cream or Greek yogurt (optional)
  • A handful fresh cilantro, chopped
  • Lime wedges, for squeezing
  • Salt and pepper, to taste

Instructions

  1. Cook 2 cups (400 g) of rice according to package instructions (about 15-20 minutes). Fluff with a fork and keep warm.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 lb (450 g) ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.
  3. Drain excess fat if necessary. Sprinkle 2 tablespoons taco seasoning evenly over the meat. Stir well and cook for another 2 minutes. Add salt and pepper to taste.
  4. Rinse 1 can black beans under cold water. Warm beans in the skillet or a separate pan for 2-3 minutes.
  5. Spoon cooked rice into serving bowls as the base.
  6. Evenly distribute seasoned ground beef and black beans over the rice.
  7. Sprinkle 1 cup (100 g) shredded cheddar cheese over the hot beef and beans. Cover skillet or bowls and let cheese melt for 2-3 minutes until gooey.
  8. Top with 1 cup (150 g) chopped tomatoes and 1 cup (50 g) shredded lettuce.
  9. Add slices of 1 ripe avocado and dollops of sour cream or Greek yogurt as desired.
  10. Garnish with chopped cilantro and serve with lime wedges. Serve immediately.

Notes

To get the best flavor, don’t overcrowd the pan when browning beef to allow caramelization. Cover the cheese while melting to trap steam and achieve gooey texture. Warm serving bowls before assembling to keep the dish hot longer. Rinse canned beans well to avoid tinny taste. Variations include vegetarian options with mushrooms or lentils, low-carb with cauliflower rice, and dairy-free with plant-based cheese and sour cream alternatives.
