  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup (180ml) milk (whole or 2%, or almond/oat milk for dairy-free)
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted, plus extra for the pan
  • 1 teaspoon vanilla extract
  • Optional toppings: fresh berries, maple syrup, mini chocolate chips, powdered sugar

Instructions

  1. In a medium bowl, whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.
  3. Pour wet ingredients into dry ingredients and stir gently until just combined; batter should be thick but pourable.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly brush with butter or oil.
  5. Using a squeeze bottle or teaspoon, drop tiny dollops of batter about 1 inch in diameter onto the skillet, spaced apart.
  6. Cook undisturbed for 1-2 minutes until bubbles form and edges look set, then flip and cook another 1-2 minutes until golden and cooked through.
  7. Repeat with remaining batter, adding more butter to the pan as needed.
  8. Serve immediately, drizzled with maple syrup and topped with berries or chocolate chips if desired.

Notes

If batter is too thick, add a splash more milk; if too runny, add a pinch more flour. Wait for bubbles and set edges before flipping to avoid tearing. Keep cooked bites warm in a low oven (200°F/93°C) while finishing batches. Avoid overcrowding the pan for even cooking.
