French Onion Funeral Potatoes combine the comforting flavors of caramelized onions, gooey melted cheese, and crispy potatoes into a warm, satisfying dish perfect for any occasion.

Ingredients

Scale
  • 32 oz frozen shredded hash browns
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 packet French onion soup mix
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese
  • 1/2 cup butter, melted
  • 2 cups crushed cornflakes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If your frozen hash browns are stuck together, let them thaw for about 10-15 minutes and gently break them apart.
  3. In a large mixing bowl, combine the cream of chicken soup, sour cream, and one packet of French onion soup mix. Stir until smooth and evenly combined.
  4. Stir in the shredded cheddar and mozzarella cheeses until evenly distributed.
  5. Add the thawed hash browns to the creamy mixture and fold everything together gently with a spatula.
  6. Season with salt and pepper to taste, keeping in mind the soup mix already contains salt.
  7. Pour the mixture into a greased 9×13-inch baking dish and spread it out evenly.
  8. In a small bowl, mix the crushed cornflakes with melted butter until coated. Sprinkle this mixture evenly over the top of the potatoes.
  9. Bake the dish in the preheated oven for 45-50 minutes, or until the topping is golden brown and the edges are bubbling.
  10. Allow the dish to rest for 5-10 minutes before serving.

Notes

[‘Use thawed hash browns to avoid a watery dish.’, ‘Customize the recipe with additional spices like cayenne or paprika.’, ‘For a vegetarian option, use cream of mushroom soup instead of cream of chicken soup.’, ‘If the topping starts to brown too quickly, cover the dish lightly with aluminum foil.’]
