Ingredients

Scale
  • 2 fresh apples (Honeycrisp, Gala, or Granny Smith), thinly sliced
  • 1 cup pecans, toasted
  • 1/2 cup blue cheese (Roquefort, Gorgonzola, or Stilton), crumbled
  • 6 cups mixed greens (arugula, spinach, and romaine)
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. Slice the apples thinly and toss them in a bit of lemon juice to prevent browning.
  3. Thinly slice the red onion.
  4. Heat a skillet over medium heat and toast the pecans for 3-4 minutes, stirring frequently, until fragrant. Let them cool.
  5. In a small mixing bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning if needed.
  6. Add the mixed greens to a large salad bowl. Layer the sliced apples, red onions, toasted pecans, and crumbled blue cheese on top.
  7. Drizzle the honey vinaigrette over the salad. Use tongs to gently toss everything together, making sure all the ingredients are evenly coated.
  8. Transfer the salad to individual plates or bowls for serving. Enjoy immediately!

Notes

For best results, use fresh ingredients and high-quality blue cheese. Toasting the pecans enhances their flavor. Keep the dressing separate if making ahead to preserve the crispness of the greens.
