A quick and easy breakfast sandwich featuring fresh mozzarella, cherry tomatoes, basil, and a tangy balsamic glaze on crusty rolls. Perfect for busy mornings or lazy weekends, delivering fresh, vibrant flavors with minimal fuss.

  • 4 ounces fresh mozzarella, sliced
  • 810 cherry tomatoes, halved
  • 810 fresh basil leaves, washed and patted dry
  • 2 crusty bread rolls or ciabatta buns, sliced
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil, for brushing the bread
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 garlic clove, halved (for rubbing on toasted bread)

Instructions

  1. Slice the fresh mozzarella into 1/4-inch thick pieces. Halve the cherry tomatoes and pick whole basil leaves. Set aside.
  2. Heat a skillet over medium heat. Brush the cut sides of the rolls with olive oil. Place them cut side down in the pan and toast until golden and slightly crisp, about 2-3 minutes. Optionally, rub the toasted bread with the cut side of a garlic clove immediately after toasting.
  3. On the bottom half of each roll, layer slices of mozzarella, then the halved cherry tomatoes. Sprinkle lightly with salt and freshly cracked black pepper. Add fresh basil leaves on top.
  4. Generously drizzle about 1 tablespoon of balsamic glaze over the basil and tomato layer.
  5. Place the top half of the roll over the layers and press down gently to keep everything together. Serve immediately for the freshest taste and best texture.

Notes

Toast the bread just right to prevent sogginess but avoid over-toasting to keep it crispy yet soft inside. Pat tomatoes dry before assembling to reduce moisture. Assemble the sandwich right before eating for best texture. Fresh mozzarella is delicate; handle gently.
