  • 1/4 cup finely chopped red onion (optional)
  • 1 small jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt, or to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Drain and rinse the black beans thoroughly to remove excess salt and liquid.
  2. If using frozen corn, thaw at room temperature or microwave briefly until no longer icy.
  3. Dice the avocado, cherry tomatoes, red bell pepper, and finely chop the red onion and jalapeño.
  4. In a small bowl, whisk together the fresh lime juice, olive oil, ground cumin, salt, and freshly ground black pepper. Adjust seasoning to taste.
  5. In a medium mixing bowl, gently fold together the black beans, corn, avocado, tomatoes, bell pepper, onion, jalapeño, and chopped cilantro.
  6. Pour the dressing over the mixture and toss lightly until everything is coated but the avocado remains intact.
  7. Optional: Cover and refrigerate for about 10 minutes to allow flavors to meld.
  8. Give it one last gentle toss, taste for seasoning, and add more salt, pepper, or lime juice if needed.
  9. Serve chilled or at room temperature.
