  • 4 cups frozen peas (about 600g)
  • 1/3 cup fresh mint leaves packed (about 15g)
  • 3 cups vegetable broth (720ml), low-sodium
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream (120ml) or coconut cream for dairy-free option
  • 1/4 cup cottage cheese (optional, 60g)
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft and translucent, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant, avoiding browning.
  3. Add frozen peas and vegetable broth. Stir and bring to a gentle boil, then reduce heat and simmer uncovered for 10 minutes until peas are tender but bright green.
  4. Remove pot from heat. Add fresh mint leaves and blend soup in batches using a blender or immersion blender until smooth and creamy, about 1-2 minutes.
  5. Return pureed soup to low heat. Stir in heavy cream (or coconut cream) and cottage cheese if using. Heat gently without boiling.
  6. Add fresh lemon juice and season with salt and black pepper to taste. Adjust seasoning gradually.
  7. Serve immediately, garnished with fresh mint or a drizzle of cream if desired.

Notes

If soup is too thick, add more broth or water to loosen. If too thin, simmer gently to reduce. Blend while warm but be cautious with hot liquids in blender. Lemon juice brightens flavors and balances creaminess. Use fresh mint for best aroma. For vegan version, use coconut milk and omit cottage cheese.
