fresh cucumber bites - featured image

A quick, easy, and healthy snack featuring crisp cucumber slices topped with a creamy, herbed cream cheese mixture. Perfect for light lunches, casual parties, or refreshing summer snacks.

Ingredients

Scale
  • 1 fresh English or Persian cucumber
  • 4 ounces cream cheese, softened
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 1/4 teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: cherry tomatoes or radishes for topping

Instructions

  1. Wash and slice the cucumber into 1/4-inch thick rounds, about 20 slices.
  2. In a mixing bowl, combine softened cream cheese, chopped fresh dill, lemon zest, garlic powder, salt, and pepper. Stir until smooth and evenly mixed.
  3. Spread about a teaspoon of the cream cheese mixture onto each cucumber slice.
  4. Optionally, top with a cherry tomato half, thin radish slice, or extra fresh dill for color and flavor.
  5. Sprinkle with freshly ground black pepper and a pinch of salt if desired.
  6. Serve immediately for the best crunch or chill for 10 minutes to meld flavors.

Notes

Do not slice cucumber thinner than 1/4 inch to avoid floppy slices. Soften cream cheese before mixing for easier spreading. Assemble just before serving to prevent sogginess. Optional toppings add color and flavor contrast.
