A quick and refreshing summer drink made with cucumber, mint, lime, and a touch of natural sweetness. Perfect for hydration and a gentle detox on hot days.

Ingredients

  • 2 medium English cucumbers, peeled and roughly chopped
  • 1/3 cup fresh mint leaves, packed and washed
  • Juice of 2 limes (about 3 tablespoons)
  • 4 cups (1 liter) cold filtered water
  • 23 tablespoons honey or agave syrup, adjust to taste
  • Ice cubes, for serving
  • Pinch of sea salt (optional)

Instructions

  1. Peel the cucumbers and roughly chop into 1 to 2 inch chunks. Rinse and pat dry the fresh mint leaves.
  2. Add cucumber chunks, mint leaves, lime juice, honey or agave, and 2 cups (480 ml) of cold water to a high-speed blender. Pulse on medium speed a few times, then blend on high for 45 seconds to 1 minute until smooth and bright green.
  3. Pour the blended mixture through a fine mesh strainer or nut milk bag into a large bowl or pitcher, pressing with the back of a spoon to extract as much juice as possible. Skip this step if you prefer a pulpier drink.
  4. Stir in the remaining 2 cups (480 ml) of cold water. Taste and adjust sweetness or lime juice as needed. Add a pinch of sea salt if desired.
  5. Refrigerate for 30 minutes or serve immediately over ice. Garnish with mint leaves or a thin cucumber slice.

Notes

Use very cold water and ice to keep the drink refreshing longer. Avoid over-blending mint to prevent bitterness. Straining yields a smoother texture but can be skipped for more fiber. Adjust sweetness to taste. Optional additions include sparkling water for fizz or a pinch of sea salt for enhanced flavor and hydration.
