  • 12 ounces fusilli or rotini pasta
  • 1 large ripe avocado
  • 1 cup packed fresh basil leaves
  • 1 clove garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/4 cup plain full-fat Greek yogurt (optional, can substitute with dairy-free coconut yogurt)
  • 2 green onions, thinly sliced
  • 1 medium cucumber, diced
  • 1 cup fresh or thawed frozen peas
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the fusilli and cook according to package instructions until al dente, about 9-11 minutes. Stir occasionally to prevent sticking.
  2. Drain pasta in a colander and rinse under cold water to stop cooking and cool the pasta. Set aside to drain thoroughly.
  3. In a food processor, combine avocado, basil leaves, minced garlic, lemon juice, olive oil, and Greek yogurt. Blend until smooth and creamy. Add 1-2 tablespoons cold water if dressing is too thick. Season with salt and pepper to taste.
  4. Dice cucumber and slice green onions thinly. Thaw peas if frozen.
  5. In a large mixing bowl, combine drained pasta, cucumber, green onions, and peas. Pour dressing over the top.
  6. Gently toss until pasta and veggies are evenly coated with dressing. Avoid overmixing.
  7. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired. Let sit for 10 minutes at room temperature to allow flavors to meld.
  8. Serve immediately or chill in the fridge for up to 2 hours before serving.

Notes

Use ripe but firm avocados for best dressing texture. Rinse pasta under cold water to stop cooking and prevent clumping. Keep dressing and pasta separate if preparing ahead to maintain freshness. Dressing can be thinned with water or lemon juice if too thick. Salad can be served chilled or at room temperature.
