A refreshing and easy-to-make summer fruit salad featuring fresh strawberries, kiwi, grapes, pineapple, honey, lime juice, and mint. Perfect for gatherings, solo lunches, or a light dessert.

Ingredients

  • 2 cups fresh strawberries, hulled and quartered
  • 2 medium ripe kiwis, peeled and sliced
  • 1 cup seedless green grapes, halved
  • 1 cup fresh pineapple, chopped
  • 3 tablespoons honey
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons fresh mint leaves, finely chopped
  • ¼ cup toasted coconut flakes (optional)

Instructions

  1. Wash all the fruit thoroughly. Hull and quarter the strawberries, peel and slice the kiwi, halve the grapes, and chop the pineapple into bite-sized pieces.
  2. In a small bowl, combine the honey and freshly squeezed lime juice. Whisk lightly until the honey dissolves and the mixture is smooth.
  3. Place all the prepared fruit in a medium mixing bowl. Pour the honey-lime dressing over the fruit and gently toss with a wooden or silicone spoon to coat evenly without bruising.
  4. Finely chop fresh mint leaves and sprinkle them over the tossed fruit salad. Fold gently to distribute the mint flavor throughout.
  5. Let the fruit salad rest in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
  6. Just before serving, sprinkle toasted coconut flakes over the top for added texture and a tropical flair (optional).

Notes

Use fresh, ripe fruit for best flavor. Mix honey and lime juice before adding to fruit to avoid sogginess. Chill salad for at least 15 minutes before serving. Optional toasted coconut adds crunch. Store leftovers in airtight container in fridge up to 2 days and stir gently before serving.
