A quick and refreshing summer drink combining sweet honeydew melon, fresh mint, zesty lime, and a Himalayan salt rim for a perfect balance of flavors.

Ingredients

Scale
  • 4 cups honeydew melon, peeled and cubed
  • 1012 fresh mint leaves, plus extra for garnish
  • Juice of 2 medium limes (about 3 tablespoons)
  • 2 cups cold water
  • 12 tablespoons honey or agave syrup (optional)
  • Himalayan pink salt for rimming glasses
  • Ice cubes for serving

Instructions

  1. Peel and cube about 4 cups (600g) of ripe honeydew melon, removing the rind carefully.
  2. Add honeydew cubes and 10-12 fresh mint leaves into a blender. Pour in 2 cups (480ml) of cold water.
  3. Blend on high for 1-2 minutes until smooth and creamy with a pale green, velvety texture.
  4. Add 1-2 tablespoons honey or agave syrup (optional) and the juice of 2 medium limes (about 3 tablespoons or 45ml). Blend briefly to combine.
  5. Optional: Pour the mixture through a fine mesh strainer or cheesecloth into a pitcher to remove pulp for a silky smooth texture.
  6. Prepare the salt rim by spreading Himalayan pink salt on a small plate. Rub the rim of each glass with a lime wedge, then dip and twist into the salt to coat evenly.
  7. Fill salt-rimmed glasses with ice cubes, pour the agua fresca over, and garnish with a sprig of fresh mint or a thin lime wheel.
  8. Serve immediately chilled.

Notes

Use ripe honeydew melon for best sweetness. Straining is optional depending on texture preference. Avoid over-blending mint to prevent bitterness. Coarse Himalayan salt is preferred for the rim; coarse sea salt can be a substitute. Chill glasses beforehand for a colder drink. Adjust sweetness with honey/agave or lime juice to taste.
