Instructions

  1. Rinse strawberries and blueberries gently under cold water. Hull the strawberries and slice them into thin pieces. Pat all berries dry with paper towels to avoid watery layers. Set aside.
  2. Tear or cut the angel food cake into roughly 1-inch pieces. Avoid making them too small as they can get soggy quickly once layered.
  3. In a chilled mixing bowl, combine the cold heavy cream, vanilla extract, and powdered sugar. Whip on medium-high speed until soft peaks form—watch closely to avoid overwhipping. If using Greek yogurt, gently fold it into the whipped cream.
  4. Start with a layer of angel food cake pieces at the bottom of each glass. Spoon a layer of whipped cream over the cake, then add a mix of red strawberries and blueberries. Repeat layers until the glass is nearly full, finishing with a generous dollop of whipped cream on top.
  5. Add fresh mint leaves or extra berries on top for garnish. Chill the parfaits in the fridge for at least 30 minutes before serving to help the flavors meld and the cake soften slightly without losing its texture.
