  • A handful of fresh mint leaves, torn or chopped
  • 1/2 cup (75g) sliced strawberries
  • 1/2 cup (75g) whole blueberries
  • Juice of 1 lime
  • Honey or agave syrup (optional, for drizzling)
  • Fresh ground black pepper, a pinch

Instructions

  1. Slice the watermelon by cutting off the ends so it sits flat, then slice into 1-inch thick rounds. Trim off the rind carefully, leaving just the red flesh. Aim for rounds about 8–10 inches in diameter.
  2. Prepare the toppings by crumbling the feta cheese into a bowl, washing and slicing the strawberries thinly, rinsing the blueberries, and tearing the mint leaves into bite-sized pieces.
  3. Arrange the watermelon rounds on a large serving plate. Evenly sprinkle crumbled feta cheese over each slice, followed by the strawberries and blueberries. Scatter the torn mint leaves on top.
  4. Squeeze the fresh lime juice over the assembled pizza, then drizzle a little honey if desired. Add a light pinch of freshly ground black pepper to enhance the flavors.
  5. Serve the watermelon pizza immediately for the best texture and flavor contrast. If preparing in advance, keep toppings separate and assemble just before serving.
