Fresh Pineapple Coconut Agua Fresca Recipe with Easy Tajin Rim

A quick, refreshing tropical drink combining fresh pineapple, coconut water, and a spicy Tajin rim for a perfect balance of sweet, creamy, and tangy flavors.

Ingredients

  • 3 cups fresh pineapple, chopped
  • 2 cups coconut water
  • Juice of 1 medium lime (about 2 tablespoons)
  • 1 to 2 tablespoons agave nectar or honey (optional)
  • Tajin seasoning for the rim
  • Ice cubes for serving

Instructions

  1. Pour Tajin seasoning onto a small plate. Rub a lime wedge along the rims of your glasses, then dip them gently into the Tajin to coat. Set aside to dry slightly.
  2. Place chopped pineapple, coconut water, lime juice, and sweetener (if using) into a blender. Blend on high for 30–45 seconds until smooth and frothy.
  3. Taste and adjust sweetness or thickness by adding more sweetener or coconut water as needed. Blend again if adjusted.
  4. Optional: Strain the mixture through a fine mesh strainer into a pitcher for a pulp-free drink.
  5. Fill Tajin-rimmed glasses with ice cubes. Pour the agua fresca over the ice and garnish with a lime wedge or pineapple slice.
  6. Serve immediately. Can be chilled up to 24 hours in the refrigerator; stir gently before serving.

Notes

Use ripe pineapple for best sweetness. Chill coconut water before blending to keep the drink refreshing. Apply Tajin rim just before serving to ensure it sticks well. Adjust sweetener last to taste. Drink is best fresh but can be stored up to 24 hours refrigerated; stir before serving. For a creamier version, substitute coconut water with light coconut milk and reduce sweetener accordingly.
