A crisp and elegant appetizer featuring thinly sliced radishes on toasted baguette slices spread with fluffy herb-infused butter. Quick and easy to prepare, perfect for entertaining or casual snacks.

  • ½ cup (115g) unsalted butter, softened to room temperature
  • 2 tablespoons fresh herbs (parsley, chives, tarragon), finely chopped
  • Pinch of sea salt, plus extra for finishing
  • Freshly ground black pepper, to taste
  • 1 small baguette or rustic bread loaf, sliced about ¼ inch (6 mm) thick
  • Optional: zest of half a lemon

Instructions

  1. Prepare the herb butter by combining softened unsalted butter with finely chopped herbs, sea salt, freshly ground black pepper, and optional lemon zest in a mixing bowl. Whip with a hand mixer or whisk for 3–4 minutes until fluffy. Refrigerate to keep cool.
  2. Slice the radishes as thinly as possible (about 1–2 mm thickness) using a sharp knife. Place in a bowl, add a pinch of salt, and let sit for 5 minutes to soften and enhance flavor.
  3. Preheat oven to 375°F (190°C). Slice the baguette into ¼ inch (6 mm) slices and arrange on a baking sheet in a single layer. Toast for 8–10 minutes, flipping halfway, until golden and crisp. Watch closely to avoid burning.
  4. Remove toasted bread from oven and while still warm, spread a generous layer of herb butter on each slice.
  5. Top each crostini with a few slices of the salted radishes. Finish with a sprinkle of flaky sea salt and freshly ground black pepper. Optionally garnish with fresh herbs or a drizzle of olive oil.
  6. Serve immediately to enjoy the crisp texture and fresh flavors.

Notes

Soften butter well before whipping for a smooth, fluffy texture. Use a mandoline slicer for even radish slices if available. Salt radishes before assembly to mellow their bite. Toast bread until golden but not overdone to maintain crispness. Assemble crostini while bread is warm to help butter melt slightly without sogginess. Herb butter and radishes can be prepared a day ahead and refrigerated separately. Use gluten-free bread and dairy-free butter for dietary adaptations.
