Instructions

  1. Prepare the graham cracker crust: Combine graham cracker crumbs with melted butter and brown sugar in a bowl. Mix until crumbs are evenly coated. Set aside.
  2. Macerate the strawberries: Toss sliced strawberries with sugar and lemon zest in a small bowl. Let sit for 10-15 minutes to release juices and soften berries.
  3. Prepare the blueberry layer: Mix blueberries with honey or maple syrup if using. Set aside.
  4. Make the cheesecake layer: Beat softened cream cheese and sugar with an electric mixer until smooth and creamy. Add vanilla extract and lemon juice, mixing briefly. In a separate chilled bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
  5. Assemble the parfaits: Spoon about 2 tablespoons of graham cracker crust into the bottom of each glass. Follow with a layer of cheesecake mixture (approx. 3 tablespoons), then a layer of strawberries, another cheesecake layer, and finally blueberries on top. Repeat layering if glasses are tall enough, finishing with a berry layer.
  6. Chill the parfaits: Cover with plastic wrap and refrigerate for at least 2 hours to let flavors meld and the cheesecake layer set nicely.
  7. Serve and enjoy: Garnish with a sprig of fresh mint or a light dusting of powdered sugar if desired.
