  • 1 pound fresh, peeled, and deveined shrimp (medium size, about 3140 count)
  • 2 large ripe avocados, halved and pitted
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • Juice of 1 large lemon (about 3 tablespoons)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt to taste (preferably kosher salt)
  • Freshly ground black pepper to taste
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Slice the avocados in half lengthwise and gently remove the pits. Use a spoon to slightly hollow out the center (about 1 tablespoon of flesh removed per half). Set aside.
  2. In a small bowl, whisk together melted butter, olive oil, lemon juice, minced garlic, chopped parsley, basil, red pepper flakes, salt, and pepper. Adjust seasoning to taste.
  3. Heat a large skillet over medium-high heat. Add shrimp in a single layer and pour half of the garlic herb lemon dressing over them.
  4. Cook shrimp for 2-3 minutes on each side until pink and opaque. Avoid overcooking. Remove shrimp from heat.
  5. Transfer cooked shrimp to a mixing bowl. Pour remaining dressing over shrimp and toss gently to coat evenly. If using, sprinkle grated Parmesan cheese and toss again.
  6. Divide shrimp mixture evenly among avocado halves, piling generously.
  7. Garnish with extra chopped parsley or basil and serve immediately with lemon wedges if desired.

Notes

Use fresh lemon juice for best flavor. Avoid overcooking shrimp to keep them tender. For dairy-free version, substitute butter with olive oil or vegan butter. Prepare shrimp and dressing ahead and stuff avocados just before serving to prevent browning. Store shrimp mixture and avocado halves separately if making ahead.
