Fresh Sparkling Watermelon Mint Mocktail

A quick and easy refreshing mocktail combining juicy watermelon, fresh mint, lime juice, and sparkling water, perfect for hot days.

Ingredients

  • 3 cups seedless watermelon chunks (about 450 grams)
  • 1012 fresh mint leaves, gently bruised
  • Juice of 1 medium lime (about 1 tablespoon or 15 ml)
  • 1 cup (240 ml) sparkling water, plain or lightly flavored
  • 1 teaspoon (5 ml) honey or agave syrup (optional)
  • Ice cubes as needed

Instructions

  1. Chop about 3 cups (450 g) of seedless watermelon into small cubes. For a smoother texture, pulse the chunks quickly in a blender or food processor until slightly pureed but still a bit chunky (3-5 minutes).
  2. Place 10-12 fresh mint leaves in a mixing pitcher. Use a muddler or the back of a spoon to gently bruise the leaves to release oils without shredding (about 30 seconds).
  3. Pour the juice of 1 medium lime (about 15 ml) over the mint. If watermelon isn’t very sweet, add 1 teaspoon (5 ml) honey or agave syrup. Stir gently to combine.
  4. Add the prepared watermelon cubes or puree to the mint mixture. Stir gently for 15-20 seconds to combine flavors.
  5. Slowly pour 1 cup (240 ml) sparkling water into the pitcher. Stir lightly to mix without losing bubbles. Add ice cubes generously to chill the drink. Taste and adjust sweetener or lime if needed (about 2 minutes).
  6. Serve immediately in glasses, garnished with a few mint leaves and watermelon pieces. Optionally, add a small sprig of mint or a thin lime wheel.

Notes

Bruise mint leaves gently to release oils without shredding to avoid bitterness. Add sparkling water last and stir gently to preserve bubbles. Use ripe watermelon for best flavor. Prepare watermelon and mint mixture ahead but add sparkling water and ice just before serving to keep fizz.
