  • 1 cup (150g) crumbled block-style feta cheese
  • 1 tablespoon finely chopped fresh mint leaves
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon extra virgin olive oil
  • Freshly cracked black pepper, to taste
  • Optional: toasted pine nuts or chopped pistachios for crunch
  • Optional: honey drizzle for sweetness

Instructions

  1. Refrigerate watermelon for at least 2 hours to chill.
  2. Cut watermelon into ½-inch (1.25 cm) thick slabs.
  3. Use a star-shaped cookie cutter to punch out as many stars as possible from the slabs.
  4. In a mixing bowl, crumble 1 cup feta cheese and add chopped mint, lime juice, olive oil, and black pepper. Gently mix to combine.
  5. Arrange watermelon stars on a serving tray.
  6. Dollop about 1 teaspoon of the feta mixture onto each watermelon star.
  7. Optionally, sprinkle toasted pine nuts or chopped pistachios on top and drizzle honey if desired.
  8. Serve immediately or chill covered in the refrigerator for up to 2 hours.
