  • 4 cups watermelon, diced into bite-sized cubes
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, optional

Instructions

  1. Rinse the watermelon under cool water. Using a sharp chef’s knife, slice it into manageable sections. Remove the rind carefully, then dice the flesh into roughly 1-inch cubes.
  2. Measure out 1 cup of feta cheese and crumble it gently with your fingers or a fork.
  3. Wash the mint leaves thoroughly and pat dry. Roughly chop to make about 1/4 cup.
  4. In a small bowl, squeeze the juice of 2 limes (about 3 tablespoons). Add 2 tablespoons of extra virgin olive oil, a pinch of sea salt, and freshly ground black pepper if using. Whisk together until emulsified.
  5. In a mixing bowl, gently toss the watermelon cubes with the crumbled feta and chopped mint. Pour the lime dressing over the salad and toss lightly again to coat evenly.
  6. Taste and adjust salt or lime if needed. Chill the salad in the fridge for at least 10 minutes before serving.

Notes

Use ripe, seedless watermelon for best flavor. Drain excess watermelon juice before mixing to avoid sogginess. For a dairy-free version, substitute feta with firm tofu or vegan cheese. Chill salad for at least 10 minutes before serving to enhance flavors. Optional additions include toasted nuts for crunch or a pinch of red pepper flakes for spice.
