Fresh Watermelon Mint Agua Fresca

A simple, refreshing summer drink combining sweet watermelon juice with bright mint and lime for a cool, hydrating beverage.

Ingredients

  • 6 cups cubed seedless watermelon (about 900 grams or 1.3 lbs)
  • 15 to 20 fresh mint leaves, washed
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 to 2 tablespoons honey, agave syrup, or simple syrup (optional)
  • 2 cups cold water (475 ml)
  • Ice cubes for serving

Instructions

  1. Cube about 6 cups of seedless watermelon into bite-sized chunks.
  2. Rinse 15-20 fresh mint leaves and pat dry; no need to chop.
  3. Add watermelon chunks and mint leaves to a blender and blend on high for 45 to 60 seconds until smooth.
  4. Pour the blended mixture through a fine mesh strainer into a large bowl or pitcher, pressing pulp to extract juice; discard pulp.
  5. Stir in the juice of 1 large lime and 1-2 tablespoons of sweetener, adjusting to taste.
  6. Add 2 cups of cold water and stir well to combine.
  7. Transfer to a pitcher with ice cubes and chill in the refrigerator for at least 30 minutes or serve immediately over ice.

Notes

Use ripe, juicy watermelon for best flavor. Do not over-blend mint to avoid bitterness. Strain to remove seeds and pulp for a silky texture but leaving some pulp is optional. Adjust sweetness last to taste. Fresh lime juice is preferred over bottled. Can blend with ice cubes for a quick slushy version. Store leftovers in fridge up to 2 days, stir before serving. Avoid freezing.
