A refreshing and easy-to-make watermelon and mint mocktail with sparkling water, perfect for hot summer days and gatherings.

Ingredients

Scale
  • 4 cups fresh watermelon, cubed and seeded
  • 1012 fresh mint leaves, gently washed
  • Juice of 1 medium lime (about 2 tablespoons)
  • 12 teaspoons sugar or honey (optional)
  • 2 cups sparkling water (about 16 fl oz)
  • Ice cubes as needed
  • Optional garnishes: extra mint sprigs or thin lime slices

Instructions

  1. Cube about 4 cups (600 grams) of seedless watermelon and transfer to a blender.
  2. Blend the watermelon for about 1 minute until smooth and juicy with no large chunks.
  3. Strain the watermelon purée through a fine mesh strainer into a bowl or pitcher to remove pulp, pressing with a spoon to extract juice.
  4. Place 10-12 fresh mint leaves in the serving pitcher or individual glasses and gently muddle with a muddler or wooden spoon to release oils without tearing.
  5. Add the juice of 1 medium lime and 1-2 teaspoons of sugar or honey if desired, stirring gently to combine.
  6. Pour the strained watermelon juice into the pitcher with the muddled mint and lime mixture, stir well, and add ice cubes to chill.
  7. Just before serving, add 2 cups (16 fl oz) of chilled sparkling water and stir gently to maintain fizz.
  8. Pour into glasses filled with ice and garnish with extra mint sprigs or thin lime slices.

Notes

Use ripe, sweet watermelon for best flavor. Gently muddle mint to avoid bitterness. Add sparkling water just before serving to keep fizz. Leftover watermelon juice can be refrigerated up to 24 hours without sparkling water. Adjust sweetness based on watermelon ripeness.
