A quick and easy breakfast bowl featuring whipped cottage cheese, crisp cucumber slices, and savory everything bagel seasoning for a light, refreshing start to your day.

  • 1 cup (240g) small-curd cottage cheese (full-fat or low-fat)
  • ½ medium cucumber (about 100g), thinly sliced
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 teaspoon (5 ml) extra virgin olive oil
  • ½ teaspoon (3g) everything bagel seasoning
  • Pinch of salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 tablespoon fresh dill or chives, finely chopped

Instructions

  1. Scoop 1 cup (240g) of cottage cheese into a medium mixing bowl.
  2. Slice half a medium cucumber (about 100g) into thin rounds, about 1/8 inch thick.
  3. If using fresh herbs, chop about 1 tablespoon finely.
  4. Using a hand mixer or blender, whip the cottage cheese on medium-high speed until smooth and fluffy, about 3 to 4 minutes. Scrape down the sides once or twice.
  5. Pour in 1 tablespoon freshly squeezed lemon juice and 1 teaspoon extra virgin olive oil. Gently fold in with a spatula or spoon until combined.
  6. Sprinkle in ½ teaspoon everything bagel seasoning, plus a pinch of salt and freshly ground black pepper to taste. Fold gently to distribute seasoning evenly.
  7. Arrange cucumber slices on the side or on top of the whipped cottage cheese.
  8. Lightly season cucumber slices with a tiny pinch of salt.
  9. Add a final light dusting of everything bagel seasoning over the entire bowl.
  10. If using fresh herbs, sprinkle them over the top now.
  11. Serve immediately or chill in the refrigerator for up to 2 hours. Stir gently before serving if chilled.

Notes

If cottage cheese is watery, drain briefly before whipping to avoid a runny texture. Do not over-whip to prevent separation. Use fresh lemon juice for best flavor. Serve cucumber fresh to maintain crunch. Can be made ahead by whipping cottage cheese up to 24 hours in advance and storing in fridge; add cucumber fresh before serving.
