  • 2 large ripe bananas (about 240g), sliced into 1/4-inch rounds
  • 6 tablespoons creamy peanut butter (90g, smooth or crunchy)
  • 1 cup Greek yogurt (240g, plain or vanilla, full-fat recommended)
  • 12 tablespoons honey or maple syrup (optional, to taste)
  • 2 tablespoons mini chocolate chips (optional, for topping)
  • Sea salt flakes (optional, for sprinkling)

Instructions

  1. Peel the bananas and slice them into 1/4-inch thick rounds. Arrange the slices flat on a parchment-lined baking sheet.
  2. Spread about 1/2 teaspoon of peanut butter onto half of the banana slices. If needed, microwave the peanut butter for 10–15 seconds to soften.
  3. Top each peanut butter-topped banana slice with a second banana slice to make a sandwich. Gently press together.
  4. Freeze the banana sandwiches for about 20 minutes, or until firm.
  5. In a bowl, stir together the Greek yogurt and honey or maple syrup (if using). If the yogurt is very thick, thin with 1–2 teaspoons of milk or water.
  6. Using a toothpick or fork, dip each frozen banana sandwich into the yogurt, turning to coat all sides. Let excess drip off.
  7. Place each coated bite back on the parchment. Immediately sprinkle with mini chocolate chips or sea salt flakes before the yogurt sets.
  8. Freeze the finished bites for at least 1 hour or until completely solid.
  9. Transfer to a freezer-safe container for storage. Enjoy straight from the freezer.

Notes

For best results, use ripe bananas and full-fat Greek yogurt. To make dairy-free, use coconut or almond-based yogurt. Add-ins like chia seeds, hemp seeds, or a drizzle of melted chocolate can be used for variety. Work quickly when dipping and topping, as the yogurt sets fast. Store in an airtight container with parchment between layers for up to 1 month.
