The perfect combination of two all-time favorite desserts: brownies and cookies. These fudgy brownie cookies are everything you love about rich, chocolaty brownies, but with the added joy of crisp edges and chewy centers.

Ingredients

Scale
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (175g) chocolate chips or chunks (dark, milk, or semi-sweet)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats to prevent sticking.
  2. In a medium bowl, whisk together all-purpose flour, unsweetened cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, using a hand mixer or stand mixer, beat unsalted butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
  4. Beat in eggs (one at a time) and vanilla extract to the butter mixture until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or by hand until everything is combined. Avoid overmixing.
  6. Gently stir in chocolate chips or chunks.
  7. Using a cookie scoop or two spoons, drop balls of dough (about 2 tablespoons each) onto the prepared baking sheets, spacing them a few inches apart.
  8. Place the baking sheets in the oven and bake for 10-12 minutes. The cookies should have puffed edges and slightly gooey centers.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.

Notes

[“Don’t overbake the cookies to keep them soft and fudgy.”, ‘Use high-quality unsweetened cocoa powder for the best flavor.’, ‘Ensure eggs and butter are at room temperature for better texture.’, ‘Chill the dough for 30 minutes if it feels too sticky.’, ‘Experiment with mix-ins like nuts, white chocolate chips, or flaky sea salt.’]
