  • 2 large eggs
  • 1/2 cup milk (dairy or unsweetened non-dairy)
  • 4 cloves garlic, minced
  • 1 small yellow onion, finely diced
  • 2 tablespoons chopped fresh parsley (plus extra for garnish)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for drizzling on top, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease a muffin tin for individual loaves.
  2. In a large mixing bowl, combine ground chicken, 1 cup Parmesan, 1 cup mozzarella, breadcrumbs, eggs, milk, garlic, onion, parsley, Italian seasoning, salt, and black pepper. Mix gently until just combined.
  3. Divide the mixture into 6 equal portions. Shape each into a small loaf (about 1 1/2 inches thick) and place on the prepared baking sheet, or press into muffin tin cups about 3/4 full.
  4. In a small bowl, mix 1/2 cup Parmesan and 1/2 cup mozzarella. Sprinkle evenly over each meatloaf. Drizzle with olive oil if desired.
  5. Bake for 22-25 minutes, or until the tops are golden and the internal temperature reaches 165°F (74°C). For extra crispy cheese, broil for 1-2 minutes at the end.
  6. Let the meatloaves rest for 5 minutes before serving. Garnish with extra parsley.

Notes

For a gluten-free version, use gluten-free breadcrumbs or almond flour. Do not overmix the meat mixture to keep the loaves tender. Add a splash of milk or a spoonful of Greek yogurt if the mixture seems dry. Double the recipe and freeze extras for easy future meals. Let meatloaves rest before serving for best texture.
