  • 1/4 cup finely grated Parmesan cheese (plus extra for topping)
  • 2 large cloves garlic, minced
  • 1/4 cup bread crumbs (panko or regular; gluten-free if needed)
  • 1 large egg
  • 1 tablespoon Greek yogurt
  • 1 tablespoon milk (any kind)
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 teaspoon olive oil (for brushing tops)
  • Chili flakes (optional, for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a small baking sheet with parchment paper.
  2. In a medium mixing bowl, combine ground chicken, Parmesan, minced garlic, bread crumbs, egg, Greek yogurt, milk, Italian seasoning, salt, pepper, and parsley.
  3. Gently fold ingredients together until just combined. Do not overmix.
  4. Divide the mixture in half and shape into two small loaves (about 4 inches long and 2 inches wide). Place on the prepared baking sheet.
  5. Brush the tops with olive oil. Sprinkle with extra Parmesan and chili flakes if desired.
  6. Bake for 22–25 minutes, or until golden and cooked through (internal temperature should reach 165°F).
  7. Remove from oven and let rest for 3–4 minutes before serving.
  8. Serve warm with your favorite sides.

Notes

For best results, do not overmix the meat mixture. Use fresh garlic for maximum flavor. Free-form loaves on a baking sheet yield crispier edges. Resting the meatloaves after baking keeps them juicy. For gluten-free, use GF breadcrumbs or almond meal. For dairy-free, substitute nutritional yeast for Parmesan and use plant-based yogurt.
