Garlic Parmesan Crockpot Chicken & Potatoes

A comforting and flavorful one-pot dish featuring tender chicken, creamy potatoes, and a rich garlic parmesan sauce. Perfect for busy days or family dinners.

Ingredients

  • 2 pounds chicken thighs or breasts, skinless and boneless
  • 1.5 pounds baby potatoes, halved
  • 4 cloves garlic, freshly minced
  • 1 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Mince the garlic, halve the potatoes, and grate the parmesan. Set everything aside for easy assembly.
  2. In a large mixing bowl, combine the halved potatoes with a pinch of salt, pepper, and half of the minced garlic.
  3. Spray the inside of your crockpot with cooking spray. Place the seasoned potatoes at the bottom, creating an even layer.
  4. Lay the chicken thighs (or breasts) over the potatoes, ensuring they’re not overlapping for even cooking.
  5. In a small bowl, whisk together chicken broth, heavy cream, melted butter, Italian seasoning, and the remaining garlic. Pour this mixture evenly over the chicken and potatoes.
  6. Cover the crockpot and set it to low heat for 6 hours or high heat for 3-4 hours. The chicken should be tender, and the potatoes will be creamy and fully cooked.
  7. About 30 minutes before serving, sprinkle grated parmesan evenly over the top. Let it melt into the sauce for a cheesy finish.
  8. Garnish with fresh parsley if desired and serve hot. Spoon the sauce over the chicken and potatoes for maximum flavor.
