  • 3 medium-sized sweet potatoes, peeled and diced into ½-inch cubes
  • 1 medium onion, finely chopped
  • 23 cloves garlic, minced
  • 2 cups fresh spinach or kale, roughly chopped
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella or cheddar cheese (optional)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • Salt and freshly cracked black pepper, to taste
  • ½ cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish with a light layer of olive oil or line it with parchment paper.
  2. Peel and dice the sweet potatoes into ½-inch cubes. Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
  4. Add the minced garlic to the skillet and cook for another 30 seconds, stirring constantly, until fragrant.
  5. Increase the heat to medium-high and add the ground turkey to the skillet. Break it up using a spatula, cooking for 5-7 minutes until browned and fully cooked.
  6. Sprinkle the paprika, garlic powder, onion powder, dried basil, salt, and pepper over the turkey mixture. Stir to combine and cook for 1-2 additional minutes.
  7. Add the chopped spinach or kale to the skillet. Stir until the greens wilt, about 2 minutes.
  8. Remove the skillet from heat and transfer the turkey mixture to your prepared baking dish.
  9. Spread the diced sweet potatoes evenly over the turkey mixture. Pour the chicken broth over the top to help keep everything moist.
  10. If using cheese, sprinkle it generously over the sweet potatoes.
  11. Cover the dish with foil and bake in the preheated oven for 30 minutes.
  12. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the sweet potatoes are tender and the cheese is melted and bubbly.
  13. Remove from the oven and let the bake cool for a few minutes before serving. Enjoy!
